Ingredients:
Pineapple chunks 1 cup
Strawberries 2 cups
Pineapple juice 1 to 2 cups
Sugar, white ½ cup (for simple sugar)
Water ½
cup (for simple sugar)
To Prepare:
For this recipe, a few popsicle molds
would come in handy but if you don’t have any in your kitchen, you can just as
easily use an ice tray and make fruit cubes instead.
Preparing simple syrup is easy. In a
sauce pan on low heat, just combine the water and sugar until the sugar is
completely dissolved. Want to prepare some simple syrup for your breakfast
pancakes? Use brown sugar instead of white.
To prepare the popsicles, place the
pineapple chunks in a blender along with a bit of pineapple juice, just enough
to help the blender along, and puree. Sweeten with a tablespoon or two of
simple syrup and set aside.
Place the washed, stem-free strawberries
in a blender with a little pineapple juice and puree. Sweeten with a tablespoon
or two of simple syrup.
Wash the raspberries, blueberries, or
slice up some kiwi for the fresh fruit bits in the popsicles.
In the mold, pour the strawberry puree first
along with pieces of fresh fruit. Fill the mold about halfway. Next, slowly
pour the pineapple puree into the mold. The two purees differ in density and
won’t mix; you’ll get a nice marbling effect, giving you a nice yellow and red
swirl.
Freeze, and enjoy!
