Dinner Recipes
Notice that we’re giving you tons of
space to adjust with a slightly heavy lunch on the first day, complete with
starch in the form of brown rice and potatoes. Don’t feel guilty; it’s all part
of the process, eat it and enjoy! For dinner, however, we’re
going to dial it back down with a salad.
Here are two great salad recipes that
is nicely paired with a glass of watered down fresh grape juice.
Avocado and Prawn Salad
Ingredients:
To prepare:
Wash the salad greens thoroughly and pat
dry or spin in a salad spinner. Tear up the lollo rossa lettuce by hand into
bite-sized pieces.
Wash the avocado and split carefully
into half with a knife. Remove the seed and remove the peel using a glass or a
goblet by scooping the flesh of the fruit out. Slice the avocado lengthwise and
set aside. Sprinkle with a little of the lemon juice.
Shell the prawns but leave the tail. You
can leave the head on for presentation and added flavor. Run a small, sharp
knife down the back of the prawns until you see a thin, black, thread-like
filament. Remove the filament; it’s part of the digestive system of the prawn
and can cause allergic reactions.
In a small pan, drizzle a little olive
oil and place on medium heat. Season the prawns with salt and pepper and toss
in the pan. When the prawns turn orange it is cooked; set them aside. Keep in
mind that prawns, like most seafood, cooks quickly. Be careful not to overcook
them.
In a bowl, combine the olive oil, apple
juice, lemon juice, and minced shallots. Whisk briskly until you create a cold
emulsion. Season the dressing with salt and pepper. Under normal circumstances,
we would use red wine vinegar or white wine vinegar instead of the apple juice
to create a vinaigrette but you can’t have vinegar during your seven day detox
but we can use a little lemon juice to mimic the effect.
Place the salad leaves in a separate
bowl and add a tablespoon or two of the dressing. Toss the salad greens until
they are consistently coated. Place the salad greens on a plate and top with
the avocado and the prawns. Drizzle a bit of the dressing on both.
If you’d like, you can add grape
tomatoes in the salad or even some actual grapes.
