Herbed Potato Salad
with Warm Apple Slices
Ingredients:
To prepare:
Peel and chop the potatoes and boil in
water until they are tender but still have bite. Set the boiled potatoes aside
to cool.
Wash and chop the parsley and chives and
combine with the yogurt. Season the yogurt sauce with salt and pepper.
After coring and slicing the apples,
place them on a grill or in an oven toaster. The apple slices will look great
with grill marks but they’re not necessary for making the grilled fruit taste
great.
In a bowl, toss the potatoes in the
yogurt sauce. Taste the potatoes with dressing and season as needed.
Serve the herbed potato salad with the
warm apple slices and enjoy!
