To prepare:
First, you need to get started on
boiling the pasta. In a pot large enough to cover the pasta, bring salted water
to a boil. Remember, there should be ten parts water to one part pasta. Let the
pasta cook until it is al dente while you prepare the rest of the ingredients.
While the pasta is cooking, you can sear
the scallops. In a pan, drizzle some or vegetable oil and bring the heat up to
full. Place the scallops down on one side until it is dark brown. Turn it over
to sear the other side. When both sides have been seared, set aside.
Chop the parsley, basil, and garlic.
Don’t forget about the pasta. When it’s
done, remove from the water but save some of the pasta water for later.
In a pan on medium heat, drizzle some of
the olive oil and sauté the garlic. Add the basil and parsley and sauté. Then
add the pasta and toss until it is completely covered with the olive oil and
herbs. Toss in a tablespoon or two of the pasta water and continue tossing. Add
the scallops before you season the mixture to taste with salt and pepper.
