Ingredients:
Pumpkin (or
squash)
Water or
light chicken broth
Preparation:
This recipe
takes a bit more effort but it’s meant to give you an idea of what you can feed
your baby when you have a lot of pumpkin around the kitchen or if you happen to
be roasting a bit of pumpkin or squash for dinner.
The idea is
to roast the pumpkin until it is incredibly soft, almost like mashed potatoes.
When it has reached that level of tenderness, take it out of the oven and mash
it with a fork. Don’t forget to let it cool completely. In fact, it might be
best if you stick it in the chiller for a little while, enough for it to get a
little cold.
To give it an
even softer consistency, add a little cold chicken broth to the pumpkin mash.
