Steamed
Fish Fillet with Onion and Tomato Relish on Brown Rice
Ingredients:
Fish
fillet, any white fleshed fish (e.g. Cream Dory)
Yellow
onion
Tomatoes
Brown
Rice
Ginger
Lemon
Dill
Low
sodium soy sauce
Aluminum
foil
Preparation:
For this
recipe, a stove-top steamer would come in handy but you can easily put together
a steamer with a large pot and a small pot that would fit inside it. This is a
great example of a meal that’s easy to prepare but tastes pretty great!
The
first step is to get the steamer started so that it is already hot enough when
you’re ready to place the fish in. You should also get started on cooking the
rice because fish cooks very fast.
Wash the
rice and place inside the rice cooker or in a pot on low heat. Cover with water
with about a centimetre of extra liquid on top and cook until fluffy and
tender.
To
begin, wash the vegetables. Core the tomatoes and dice into approximately
half-centimetre cubes. Peel the onions and chop into about the same size as the
tomatoes. Peel the ginger using a spoon and grate; a pinch should be enough for
one fish fillet. Juice the lemon. Chop the dill finely.
Fold the
aluminium foil into an envelope, leaving one side open. Place the fish fillet,
the onions, the tomatoes, the dill, a teaspoon of low sodium soy sauce, and
about a tablespoon of lemon juice inside the aluminium foil envelope. After
that, all you need to do is place it inside the steamer.
The fish
will cook in about 7 to 9 minutes; it’s that fast. This is one of my favourite
dishes because it’s very easy to prepare and it gives you a lot of really great
flavors, perfect with rice or even with just a bit of steamed, smashed broccoli
or cauliflower.
