Grilled
Cajun Chicken and Pineapple Relish Taco
Ingredients:
Chicken
breast
Cajun
seasoning
Pineapple
Cilantro
Whole
wheat tortilla
Choice
of salad greens
White
wine vinegar
Extra virgin olive oil
Preparation:
Here
is a recipe with a clear Mexican influence, perfect for those who like their
food with a little kick.
Prepare
the pineapple relish ahead of time. Cut the pineapple into approximately
half-centimetre pieces. Chop the cilantro finely (you can substitute with
parsley if you’re not fond of cilantro). In a small bowl,
combine
the pineapple, the cilantro and a mixture of white wine vinegar and extra
virgin olive oil; enough to coat the ingredients thoroughly. You can also season
with a little cumin if desired.
To
cook the Cajun chicken, preheat your grill, making sure that it is clean.
Butterfly the chicken breast or cut until thin. Lightly season the chicken with
Cajun seasoning. Spray the grill with spray-on cooking oil and grill the
chicken until cooked.
After
grilling the chicken, place the whole wheat tortilla on the grill until it is
hot or until it has grill marks and remove from the grill.
Slice
the chicken into thin strips.
