The Ultimate Easy to Prepare Vegetarian Recipes Cookbook - Hummus

Hummus

Ingredients:
Chickpeas                                1 cup
Tahini paste                             1 tablespoon
Lemon juice                            1 or 2 tablespoons
Olive oil                                  3 to 4 tablespoons
Garlic, minced                         1 tablespoon
Salt                                          Season to taste
Pepper, black                           Season to taste
Water                                      As needed

To Prepare:

Boil the chickpeas and peel. If you are using canned chickpeas, just drain the can and peel the chickpeas. Wash the garlic, peel, and chop finely.

In a blender, add the chickpeas, tahini, lemon juice, olive oil, and garlic and puree until smooth. Add water if needed. Season with salt and black pepper to taste.

Moutabelle

Ingredients:
Eggplant                                  1 large piece
Garlic, minced                         ¼ cup
Onion, chopped                      ¼ cup
Lemon juice                            From one large lemon
Olive oil                                  3 to 4 tablespoons or more
Parsley, chopped                     ¼ cup
Salt                                          Season to taste
Pepper, white                          Season to taste 

To Prepare:

Wash the whole eggplant and grill it until the skin can be easily removed. Remove the skin using a table knife.
Season the eggplant with salt to help remove the moisture; let it stand for 15 minutes.

After leeching the moisture out of the eggplant, chop it up into small pieces and place inside a blender. Add in the rest of the ingredients and puree. Season with salt and pepper; add a little more lemon juice if needed.
You can set aside a bit of chopped parsley for garnish
