The Ultimate Easy to Prepare Vegetarian Recipes Cookbook - Polenta

Polenta

Ingredients:
Cornmeal                                 1 cup
White onion, chopped             1/8 cup
Garlic, minced                         1 tablespoon
Olive oil                                  2 to 3 tablespoons
Vegetable stock                      1 ½ cup
Milk                                         1 ½ cup
Bay leaf                                   1 piece
Parmesan, grated                     ½ cup
Salt                                          Season to taste
Pepper, white                          Season to taste

To Prepare:

Peel, wash and chop the onion and garlic.

In a pan on medium heat, sauté the onion and garlic in olive oil. Add the vegetable stock and milk and bring to a simmer (never boil milk) while constantly stirring. Add the cornmeal gradually, in small amounts or in a thin but steady stream while stirring constantly. Continue to stir the cornmeal mixture while it is simmering. When you get the consistency that is thick, almost mashed potatoes but runny, you can season to taste with salt and pepper.
