Ingredients:
Rice, cooked 1 cup to 1 ½ cup
Olive oil 1 to 2 tablespoons
Garlic, minced 1 to 2
tablespoons, minced
Mango ¼
cup, diced
Cilantro, chopped 1 tablespoon
Salt Season
to taste
Pepper, white Season to taste
To Prepare:
Peel, wash and chop the garlic finely. Wash the mango, peel, and dice into about half a centimetre in size. Wash the cilantro and chop finely, stem and all.
In a pan, heat up the olive oil. Add garlic and sauté briefly. Add the cold cooked rice and sauté until lightly coated with the olive oil. Add both the mango and cilantro and sauté. Season the fried rice to taste with salt and pepper.
Other versions of fried rice includes kimchi fried rice, spinach and mushroom fried rice, saffron and turmeric fried rice, and pineapple and dill fried rice.
