Ingredients:
Balsamic vinegar 1/3 cup
Olive oil, extra virgin 1 cup
Shallots, minced 1 to 1 ½ teaspoon
Salt Season
to taste
Pepper, white Season to taste
Sugar Season
to taste
To Prepare:
First, peel and wash the shallots before chopping them finely.
Put all of the ingredients in a bowl and whisk briskly until the oil is emulsified or place everything in a blender and blend. As a final step, season with salt, pepper, and sugar. Always leave seasoning for last.
Balsamic vinaigrette is very basic vinaigrette and can be a stepping stone to a lot of other vinegar-based dressings. For example, using raspberry vinegar instead of balsamic vinegar can give you a raspberry vinaigrette. Add a little orange juice to a white wine vinaigrette and you can have a citrus vinaigrette, and you can do the same with a lot of fresh fruit juices.
Yogurt Garlic Sauce
Ingredients:
Yogurt ¾
cup
Garlic, minced 1 to 2
teaspoons
Sour cream ¼ cup
Tahini paste, if available 1 teaspoon
Salt Season
to taste
Pepper, white Season to taste
Sugar Season
to taste
To Prepare:
First, peel and wash the garlic and chop
them finely.
Place all of the ingredients together in
a blender and blend. Season to taste with salt, pepper, and sugar.
